
You Will Need (To serve 2 to 3)
Spinach - 1/2 cup, chopped
Garlic - 4 pods, finely chopped
Veg Broth - 3-4 cups
Butter - 1/2 tsp
Bay leaves - 2
Lemon juice- 3 tsp
Salt & Pepper - to taste
Method
Take a saucepan and drop in the butter and garlic together inside.
Once the butter melts and the garlicky smell starts coming out, pour the veg broth on top of this, and drop the bayleaves inside. Reduce the broth to required consistency.
Now, add the chopped spinach to the broth and cook for 2 to 3 minutes.
Switch off the stove, Remove the bay leaves, and add the lemon juice to the soup.
Add Salt and pepper and serve with hot toast..
